Cauliflower and Spinach Dahl (red)

So I've never officially made Dahl before, its always been one of those I'll get round to it one day type of things. So I finally did it and it was amazing!

Cauliflower and Spinach Dahl

This serves about 4 as a main.

medium brown onion (chopped)
1 red chilli chopped (1tbsp chili powder)
1-2 inches chopped ginger
1/2 tsp tumeric
2tbsp cumin
1 1/2 tsp ground coriander
10 curry leaves or 1 - 1 1/2 tbsp of curry powder
1tbsp chilli powder
500g red split pea - rinsed
2 1/2 L water
600g cauliflower
100g - 150g chopped spinach

In large saucepan on medium heat soften onions, add ginger + chili season if needed (not counted)

Add spices + heat stirring constantly

Add split peas and coat with the spices (if it doens't look coated enough add more ;])

Add water (to cover everything) and increase to high heat till = boil

Reduce heat and simmer partially covered for about 25 minutes or until split peas are tender/mush

Add cauliflower and cook for 10 more minutes or untill its soft (mashes by being pushed with a spoon but still holding its shape).

Fold in spinach and then remove from the heat (either its baby spinach or chopped really finely so it should soften really quickly).

Serving suggestions include as a thick soup/stew, over rice, with a garden salad or on chappatti (bread)
