So I've been super busy lately and haven't had time to really do anything let along blog, however a few things that i've been eating in the 5seconds I have spare to do that kinda stuff are below for when everyone else gets crazy busy/ super lazy as well :)
Most of these serve 1 the soup could serve 2.
Baked Beans & Broccoli
Pretty self explanitory this one, take under 10 minutes, tastes amazing & is super good for you.
Basically a 'tree' of broccoli chopped in whatever way takes your fancy
1/2 a can of baked beans
microwave for 5 -6minutes
surprisingly yummy you'll never do something silly like use toast again.
**variations include replacing the broccoli with cauliflower, spinach all worked really well. Eggplant, snow peas and celery worked not so well....
Mexican
100g kidney beans
100g corn kernals
200g chopped mushroom
salsa to taste
microwave till mushrooms are cooked, wrap in iceberg lettuce leaves and enjoy
definatly an all time fav, so tasty!!!!
Another Cauliflower Soup
3- 400g cauliflower chopped roughly
100g celery
1/2 cup cooked chickpea or lima beans
1tsp / half a cup of massel salt reduced chicken stock
cumin, black pepper and garma masala to taste
enough water to cover the cauliflower
put it all in a saucepan, leave for 30 odd minutes
mush with a fork and add more pepper if you need too.
Stuffed capsicum
40g TVP
100g chopped tomato
tuscan seasoning
1 small capsicum seeded and cut in half
1 small zucchini chopped
mix TVP, and tomato and add enough water to cover the TVP and microwave it till its rehydrated.
Turn on a grill
While the grill heats up saute or microwave the capsicum till it starts to soften (still in 2pieces) and the zucchini.
Mix zucchini w/ TVP mixture and add seasoning before stuffing the capsicum with the mixture.
Grill till its gone crispy. To the innocent bystander it looks like you put in effort too... :)
Blatantly Obvious Open Sandwich
I know this is going to be darn obvious, but I've recently re-discovered it so I'm going to share/remind you of its brilliance.
(4) corn thins (multigrain or soy and linseed)
(1/2) avocado
(1 med) sliced tomato
can also replace avocado and tomato with mashed bannana and cinnamon/nutmeg :)
