Soup # 1
1.5 cups of dried soup mix legume which i'd soaked in boiling water for 1+_hrs
bout 250g frozen shredded spinach
3heaped tsp of masssel salt reduced 'chicken' stock
2 small onions shredded
...couple of handfuls of chopped cauliflower
bout 400g chopped celery
200-300g musrhooms sliced
3 large carrots sliced
umm random amounts of chilli powder, garma masla, cumin, paprika, tumeric and a dash of pepper

Old Stuff from Myspace # 2 (pre-vegan)
Some of the best recipies I've come up with since I've become a Vego and have to cook all myfood myself
and they are even calorie contolled
Yay!
I've had a few misses, lots of fair good food, and some amazing hits. Below are the amazing hits.
Apple, Celery and Cinnamon Salad
300g Apple with skin (red or green or both) chopped/shredded with a knife
250g Celery sliced/chopped
*1tbsp Ground cinnamon
*1/2tsp Ground ginger
*1/2tsp Ground nutmeg
**1 1/2tbsp Cinammon Sugar
+ chopped whole almonds (can be added or omitted from both variations)
* = variation 1
** = variation 2
Beetroot & Chinese Cabbage Salad
160g Beetroot - canned, diced with juices
250g Chinese Cabbage - Wombok shredded
220g Carrot chopped
250g chopped/sliced
1 -2oz (28 - 56g) Cheese (low-fat) shredded
Put in bowl, and mix so that everything is covered in beetroot juice.
Mexican Salad
1 cup canned drained red kidney beans (small or large)
200g Mushrooms chopped
100g Hot Salsa/Taco Sauce
1 - 2oz (30/45 or 60g) Low-Fat shredded cheese or cheese substitute
150g chopped tomato
1 -2cup some raw leafy green, ie lettuce(shredded), rocket, baby spinach.
Put bean, salsa, tomato, mushroom and cheese in a bowl and put in microwave on high for 2 - 7minutes depending on how good your ingredients + microwave are and how cooked you want it
You want it all melty, and gooey and with the mushrooms + tomato having made liquid and the beans soft
Add leafy green and eat
Tempeh Stirfry (fair obvious - but it just works so well!)
10g Wild Rice Raw
100g Tempeh
100g Red or Yellow Capsicum
250-500g Bok Choy
300g Mushroom (whatever type chopped)
3tsp ginger crushed (or from a tube)
1.5tsp hot chilli powder
Precook - rice (have it so its still in a bit of water (10g gotta be microwaved so yeah put it in lots of water so it doesn't go crispy, you use the water anyways)
Grill thinly sliced tempeh till crispy
Put mushrooms in hot pan, with a bit of water so they go all soft
add ginger and chilli powder to rice + rice water and then add to mushrooms
Wait till that water evaporates, and stuff starts to fry nice, then add more water to make more steam and bok choy and chopped capsicum and just leave it there till its all wilted and cooked
Add in cooked tempeh and stir in till its all covered with the juices, and the tempeh has gone a bit soft again
then put it all in a bowl, including the nice tasty healthy juices and eat it.
*high in iron + protein, capsicum has Vit C to help iron absorption.
** can add more than 10g rice to make it more carby/filling, but thats a large bowl of veggies
Broccoli & Chickpea Broth/Soup
250g Broccoli chopped (basically 1 whole small tree)
100g Mushroom chopped
50g Tomato chopped (1 medium)
1small onion (white/yellow/brown - whatever YOU call it)
1/3 cup Chickpeas canned + drained (could also be 1/2 -1cup)
1 cube Massel (salt-reduced chicken, could also be normal chicken or beef) done in 2cups of boiling water
1tsp chilli powder - HOT
1/2 tsp cumin
3tsp+ ground ginger
Make massel + add chilli, cumin and ginger
Microwave broccoli with a little bit of water until just soft
Cook onion in fry pan with a little bit of water to stop it burning, add mushrooms till slightly tender
Add broccoli (and broccoli water) + chickpeas, wait till chickpeas are warm then add massel mixture + tomato and simmer for 5+minutes
ie till your ready to eat it basically, but not too long
Most amazing soup thing ever. I don't normally do 'soup' but im getting into stuff like this.
I can't remember if these are 1ppl or 2ppl serves. But the amounts are just what I used when I made it to give an idea of proportions. I think most of them are just 1 really big serve, cause I usually jsut eat heaps of veggies and stuff. Most of its ok nutritionally balance wise and stuff too, well I try. And yes its all from my head, tho its probably fairly obvious, so I haven't just stolen other peoples ideas, oh the soup is modified off of a ready steady cook one, and the apple one is an idea from waldorf salad, but thats it. No copyright infrindged here : )
Basically to summarise, beans + chickpeas are amazing, vegetables esp. green leafy ones, celery, cucumber, carrot and pumpkin are amazing. Mushrooms rule the world. Ginger + chilli and curry are the bomb. You can use water instead of fat/oil in cooking.
Wild rice + bran/bran flakes or brown rice are the bestest carbs ever.
Oh and vegemite and milo are good for you. Beleive it as random as it sounds haha
And my cooking is weird, microwave based and experimental and occasionally produces the above, and occasionally just as spectacularily misses ie, disgusting lentil curry (which was very nutritious and low in calories, but was disgusting, well better after i'd modified it a bit but still..)
Let me know if you try any and what you think, otherwise this was just more rant by me.

10 minute soup
1/2 cup lentils
200g cauliflower
100g frozen spinach
1 massel cube
100g mushhroom
make massel up (1 cube = 2 cups stock)
add cauliflower, frozen spinach and mushrooms and microwave on high for 5minutes
at lentils microwave for a further 2minutes
eat...
Vegan Chocolate Mouse
200g chocolate
400g firm silken tofu
6 tsp sugar
2 tsp vanilla essence
Blend tofu
melt chocolate
add, chocolate, sugar and vanilla essence
blend till all the same colour
put in fridge till set
Pumpkin and Lentil Salad
2 cups cubed baked pumpkin
1 can drained lentils
250g baby spinach
Heat up lentils in microwave for 2 minutes
add already baked cuped pumpkin (butternut is the best)
add baby spinach, mix and eat
can be further heated for a minute if you want to wilt the spinach
Stuffed Mushrooms
250g frozen spinach
12 large flat mushrooms
1tsp chili
2tsp ginger crushed
1tsp garlic if you like garlic
3 cherry tomatos finely sliced
*optional 100g tofu
Defrost spinach and add spices and chopped up mushroom steams (tofu if adding it). Pile large amounts in mushrooms, if you have left over stuff, just grab some more mushrooms till its all gone.
Place a slice of cherry tomato balanced on of each one and then place under a grill untill slightly crispy.

Occasionally people express interest in what I eat.... this is me sharing my hits (and for giggles my epic misses) with you all, so you can try it if you want, or just to get you thinking.
Nothing is concrete, I encourage you all to be creative, try new things and never follow any rules....
including any recipies that I post, cause they wouldn't exist otherwise...
